Every fruit buyer knows the challenge.
A mango harvested in April doesn't taste the same as one harvested in November. Sugar levels shift. Texture changes. Supply fluctuates. Yet consumers expect the same consistency every time they open a pack, blend a smoothie, or bite into a fruit snack.
Consistency sounds simple. In reality, it's one of the hardest things to achieve with a natural ingredient.
At TNG, "Picked at Perfection, Preserved at Peak" isn't a marketing tagline. It's a system we built across sourcing, testing, storage, processing technology, and R&D; designed to deliver the same quality, season after season.
It Starts at the Source
The journey begins in the orchard.
Before fruit is accepted for processing, every lot is evaluated against the requirements of its intended market. One of the most important measurements is Brix, which indicates the natural sugar content of the fruit.
Different markets have different expectations:
- United States: typically 11° Brix
- European Union: approximately 12° Brix
- Japan: often 14° Brix or higher
Rather than applying a single internal standard, each lot is tested against the specification required by the customer.
Peak-season mangoes often arrive at around 13° Brix, comfortably meeting most requirements. During off-peak periods, fruit can arrive closer to 11° Brix. In some cases, mangoes entering our facilities at 6.5–6.8° Brix are carefully stored and ripened further before processing.
For buyers, that means the number on the specification sheet isn't an estimate, it's a quality gate that fruit must pass before moving forward.
Preserving Peak Harvest Beyond the Season
Nature works on seasons. Markets don't.
Mango harvests typically peak between March and May, while dragon fruit reaches its strongest production period between June and December. Without intervention, supply would rise and fall with the harvest calendar.
That's where cold storage becomes critical.
Fruit harvested during peak season is preserved and stored under controlled conditions, allowing us to extend availability well beyond the harvest window. Rather than relying on whatever fruit is available in the market at a given time, we can draw from inventory that was selected and preserved at its best.
The result is a more stable supply chain and greater confidence for manufacturers building year-round products around tropical fruit ingredients.
Technology That Protects What Nature Creates
Harvesting exceptional fruit is only the beginning. The next challenge is preserving its natural qualities.

IQF Frozen Fruit: Individual Quick Freezing (IQF) rapidly freezes each fruit piece at its peak freshness. This helps maintain colour, texture, and nutritional value while providing flexibility for beverages, desserts, dairy products, and food manufacturing applications.
Vacuum-Fried Fruit: Vacuum frying uses lower temperatures and reduced pressure to create a light, crispy texture while helping preserve the fruit's natural colour, flavour, and nutritional characteristics. Different technologies. Different formats. One shared objective: preserving the quality present at harvest.

As ingredient formats evolve, maintaining quality becomes increasingly complex.
That's why R&D at TNG has grown into a dedicated function with specialised teams focused on specific processing technologies, including soft-dried and vacuum-dried development.
Each format presents its own technical challenges. Moisture management, texture optimisation, colour retention, shelf-life performance, and application behaviour all require different expertise.
