Brix: The Sweetness You Can Measure

Brix (°Bx) is a measure of natural sweetness – specifically the percentage of dissolved sugar in fruit juice. In mangoes, typical Brix level is 11° and up, depending on the variety, climate, and ripeness. 

In IQF mango, Brix matters because it directly impacts:

  • Flavor intensity – higher brix level means better natural taste
  • Freeze stability – sugar protects structure during freezing
  • Batch consistency – essential in industrial manufacturing

IQF mango with 13-16°Bx delivers a strong tropical flavor without added sugar or stabilizers.

Ripeness: The Key to Texture, Color, and Performance

Sweetness alone doesn’t guarantee quality. Ripeness at harvest determines how well mangoes hold up through freezing, cutting, and thawing. Harvest too early, and the fruit is tough and bland. Too late, and it turns mushy, discolored, and prone to clumping.

That’s why we implement variety-specific ripeness standards:

  • Cat Chu: 80–85% ripe (~70% yellow skin)
  • Kaew: 75–80% ripe (30–50% yellow skin)

 

To preserve freshness and limit microbial growth, all fruit is harvested early in the morning, while field temperatures are below 30°C.

This approach is shaped by factors such as harvest timing, the origin of raw materials, and cultivation monitoring records – which we strive to incorporate into our sourcing system over time.

2. Controlled Ripening (Ethylene Incubation)

For mangoes harvested slightly early (to ensure transport firmness), we use ethylene-based incubation in temperature and humidity-controlled chambers to bring them to optimal ripeness.

This ensures:

  • Brix rises to desirable levels, depending on product spec.
  • Even ripening across batches
  • Ideal texture for slicing and flavor retention

3. Sorting & In-Line Grading

On the line, we use both manual inspection and mechanical grading to sort mangoes by:

  • Color
  • Texture
  • Brix compatibility

This minimizes batch variability and improves uniformity in the final frozen product.

4. IQF Precision Processing

Our individual quick freezing (IQF) technology preserves aroma, structure, and performance with minimal clumping and drip loss. Processing is HACCP and BRC-compliant.
